WELCOME IN THE LUNAR NEW YEAR WITH CÉ LA VI’S AUSPICIOUS REUNION FEAST

Ring in the festive season and celebrate new beginnings at CÉ LA VI this Lunar New Year for a memorable experience. From 28th January to 10th February 2019, treat family and friends to a Contemporary Asian Lunar New Year Menu that showcases auspicious dishes presented with a signature modern twist, to commemorate a year of luck and prosperity.

Channelling his culinary creativity, Chef Joey Sergentakis, has curated an exclusive set menu that showcases modern interpretations on Chinese heritage for the momentous occasion. Toss to a year of prosperity with CÉ LA VI’s delectable adaptation of Yu Sheng with salmon, peanut and sesame drizzled with honey plum sauce; this exquisite dish is a celebration must-have. Toast to longevity with Marinated Tuna with Oscietra Caviar, salted Kampot pepper, calamansi and finished off with lemongrass oil. Welcome luck with the delicately balanced Roasted Chilli – Chicken Velouté with mushroom dumplings.

Guests can choose from Ling Cod with Crispy Spinach Noodles, khao soj broth, pork belly and coconut or Steamed Sea Bass with Crushed Chilli & Soy Beans, served alongside taro root, Chinese Sausage, lily bulbs & shitake mushrooms to usher in harmony. Taking centre stage are the delectable mains, where diners can either choose the Lychee Wood Smoked Duck Breast with toasted peanuts, baby bok choy & chinkiang vinegar sauce or the Sucking Pig Roulade with truffle, pearl barley, crispy shallots and Chinese ham, the symbolism of wealth.

For the finale, spread the joy of love with a decadent dessert for the senses. Mandarin Orange Cheesecake is served alongside vanilla ice cream to round up the auspicious feast perfectly.

The menu will be complemented with an exquisite selection of wines hand-picked by Master Sommelier, Mathias Camilleri. Guests can choose to pair the menus with a wine pairing option. Some of the fine wines and champagnes will include; Crios Torrontés, Crios, Susanna Balbo Wines (Mendoza, Argentina 2017), Pinot Noir, Dalrymple (Tasmania, Australia 2015) and Couvent Des Jacobins (Saint-Émilion Grand Cru, Bordeaux, France 2006).
